Then there is the 100 proof (!) DAILUAINE from 1973. Holy cow - this is a huge malt. It's big and chewy, even with a drop or two of water, the flavour lasts and lasts. Iodine appears up front, then orange, and caramel candy and much, much more.. Despite being 100 proof, its not gassy; remarkably, it's thick and creamy in the mouth. A malt worth sipping very slowly and savouring. (Rating ****3/4)
Pronounced "dal-u-ayn". Translation from Gaelic is "green valley". Beautifully located between the Ben Rinnes mountain and the river Spey. The distillery was established 1852 and is a mile of the Aberlour to Grantown road in the hamlet of Carron. It sources its water from the Bailliemullich Burn and has a local supply of barley. The Dailuaine distillery operates with 6 stills (three large pairs) and produces a full-bodied Speyside spirit (it is a malt with Johnnie Walker). It replaced the traditional floor maltings with a Saladin Box until 1983 when it began to source from one of the industrial maltings. All Dailuaine whisky is tankered away to be filled into casks at a central warehousing complex. The whisky is lightly peated.
